The estate is the largest continuous coffee farm in Costa Rica, covering 924 hectares, 80% of which is planted under shade-grown Arabica.

The mix of two varietals Marsellesa & Red Obatá, has made ‘Between Rivers’ a delicate, versatile, and unique coffee. Washed by detaching the pulp & mucilage, then mechanically washed for a partial fermentation, followed by 32 hours drying in the ‘Guardiola’, 45ºC – 55ºC ranges.

Aquiares coffee is hand-picked to ensure high quality, with skilled harvesters earning above-average wages for selecting ripe cherries. Each tree is visited up to seven times during harvest to pick only fully ripe cherries. Freshly picked cherries are processed on-site, producing washed, honey-processed, and natural coffees. After pulping, drying, and then resting in silos for a month, the beans are sorted and prepared for export.

Workers from Aquiares and nearby regions benefit from safe living conditions, on-site housing, childcare, and bi-weekly health check-ups. The farm also offers physical therapy and daily warm-up routines for workers.

Aquiares is a leader in environmental sustainability, recognizing the link between agricultural, environmental, and social health. The farm enhances soil quality through natural methods, such as leaving organic matter from pruning and diverse shade trees to nourish soil microbes. These trees also regulate ground temperature, improving coffee quality.
Aquiares aims for synergies where environmental health supports coffee plant health, ensuring long-term high-quality coffee production. With varied terrain and microclimates, the farm focuses on the individual needs of each coffee plant through independent pruning. Additionally, Aquiares has rehabilitated over 400,000 coffee trees, which helped resist disease during the 2012 rust attack.
